Pumpkin Angel Food Cake

  • 1 packet yellow cake mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 4 eggs
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1-1/2 tsp cream of tartar
  • 1/2 cup canned pumpkin
  • Confectioners’ sugar


  1. Preheat oven to 350 grades. Grease sides and bottom of fluted tube pan with unsalted butter. Lightly flour.
  2.   In a large mixing bowl, beat the eggs, water, oil, cake mix, cream of tartar, cinnamon and nutmeg on medium speed. Fold in pumpkin.
  3. Pour batter into pan and bake for 30-35 minutes or until lightly browned and entire top appears dry. Cool in pan completely, about 1 hour.
  4. Run a knife around the sides and center tube of pan. Remove to a serving plate. Sprinkle top of cake with confectioners’ sugar.
