Cider Roasted Squash

  • 4 cups cubed peeled butternut squash.
  • 1 medium purple onion, cut into thin wedges.
  • 2 tbs apple cider.
  • 1 tbs olive oil.
  • 1 1/2 tsp brow sugar.
  • 1/4 tsp salt.
  • 1/8 tsp pepper.
  • 1/8 tsp ground nutmeg.
  • Garnish with pumpkin seeds, feta cheese, baby Arugula, walnuts or cilantro. (optional)


  1. Preheat the oven at 450 °F and grease a 13 x 9 x 2 inch baking dish.
  2. Place the squash and onion in baking dish.
  3. In a bowl combine remaining ingredients and pour over squash mixture. Cover and bake for 35 minutes or until tender, stir every 10 minutes.
