ORANGE BARS

Orange Snack Bars

Ingredients

Crust

-1 cup butter, softened.

-1/2 cup confectioners’ sugar.

-2 tsp grated orange peel.

-1 3/4 cups all purpose flour.

-1/4 tsp salt.

Filling

-4 eggs.

-1 1/2  cups sugar.

-1/4 cup all purpose flour.

-1/2 tsp baking powder.

-1/3 cup orange juice.

-2 tsp grated orange peel.

-confectioners’ sugar.

Directions

  1. In a mixing bowl, cream butter and confectioners’ sugar. Add orange peel; mix well. Combine flour and salt; gradually add to creamed mixture.
  2. Press into a greased 13 x 9 x 2 inch baking pan. Bake at 350 °F for 13-15 minutes or just until edges are lightly browned.
  3. Meanwhile. in a mixing bowl, beat eggs and sugar. Combine the flour and baking powder. Add to egg mixture with orange juice and peel; beat until frothy. Pour over hot crust.
  4. Bake for 25 minutes or until light golden brown. Cool on wire rack. Dust with confectioners’ sugar. Cut into squares. Store in the refrigerators.
