Albacore Vegetable Pilaf Rice

  • 1 cup long grain white rice.
  • 1 can (14.5 oz.) chicken broth.
  • 1/4 cup water.
  • 2 tbs lemon juice.
  • 1 tsp dried dill weed.
  • 1 tsp salt.
  • 1/4 tsp ground black pepper.
  • 1/4 tsp garlic powder.
  • 1/2 cup chopped red bell pepper.
  • 1/2 cup chopped green bell pepper.
  • 1/2 cup chopped zucchini.
  • 1/2 cup corn.
  • 1 cup sour cream.
  • 1 can (12 oz.) Solid White Tuna, drained and chunked.


  1. In medium saucepan with tight-fitting lid, combine rice, chicken broth, water, lemon juice, dill, salt, black pepper and garlic powder. Bring to a boil; cover. Reduce heat; simmer 15 minutes.
  2. Stir in vegetables; cover and continue cooking 5 more minutes or until all liquid is absorbed. Stir in sour cream and tuna.
