RED CHICKEN CHILI SOUP

Red Chicken Chili Soup

Ingredients

  • 1 tbs vegetable oil.
  • 1 pound chicken breast tenders, cut into bite-sized pieces.
  • 3/4 tsp salt, divided.
  • 1/2 cup sliced onion.
  • 2 tsp minced garlic.
  • 2 tsp ground cumin.
  • 1 tsp ground coriander.
  • 1/2 tsp dried oregano.
  • 1/4 tsp ground red pepper.
  • 3 cups no-salt-added canned red beans, rinsed and drained.
  • 1 cup water.
  • 2 (4 oz.) cans chopped green chiles, undrained and divided.
  • 1 (14 oz.) can chicken broth.
  • 1/4 cup cilantro leaves.
  • 1 avocado, cut in cubes.

Directions

  1. Heat a Dutch oven over medium-high heat. Add oil to pan; swirl to coat. Sprinkle chicken with 1/4 tsp salt. Add chicken; saute 4 minutes.
  2. Add onion, cumin, garlic, coriander, oregano, and red pepper. Saute 3 minutes. Add 2 cups beans, 1 cup water, remaining 1/2 tsp salt, 1 can chiles, and broth; bring to a boil.
  3. Mash 1 cup beans and 1 can chiles in a bowl. Add to soup; simmer 5 minutes. Serve with cilantro and avocado.
