Tuna-Pasta Casserole

  • 6 oz. of you favorite pasta, uncooked.
  • 1 tbsp butter.
  • 3/4 cup onion, chopped.
  • 1 cup milk.
  • 1 (8 oz.) tub cream cheese.
  • 1 tbsp fresh lemon juice.
  • 1/4 tsp salt.
  • 1/4 tsp pepper.
  • 3 (4.5 oz.) cans low-sodium tuna in water, drained and flaked.
  • 1 red bell pepper, diced.
  • 1 cup grated fresh Parmesan cheese.


  1. Preheat oven to 450°F .
  2. Cook pasta according to package directions, omitting salt and fat. Drain.
  3. While pasta cook, melt butter in a saucepan over medium heat. Add onion, saute 3 minutes. Add milk and cream cheese. Cook 3 minutes; stir with a whisk.
  4. Combine cream cheese mixture, pasta, lemon juice, salt, pepper, tuna and bell pepper in a 2 quart casserole.
  5. Sprinkle cheese on top. Bake for 15 minutes.
